Monday Yummies: Oatmeal Sandwich Cookies!
I was looking for something fun and yummy to make with the kiddos and I found this fun recipe by Paula Deen. The Oatmeal cookies are so fluffy and yummy. I substituted the raisins for chocolate chips though because my family’s not big fans of raisin cookies…
Ingredients
- 1 cup of butter, at room temperature
- 1 1/4 cup packed brown sugar
- 1 large egg
- 1/4 cup of milk
- 2 cups all purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 1/2 cups quick cooking oats
- 1/2 cups of raisins ( I used a cup of chocolate chips)
- Hot fudge sauce
- Marshmallow cream
Preheat the oven to 350 degrees.
In a large bowl cream the butter and sugar until it’s creamy. Add the egg and then the milk until it’s all combined.
In a medium bowl mix the flour, baking soda, salt, cinnamon, and nutmeg. Slowly beat in the dry ingredients to the butter and sugar mixture. After it’s all combined add in the oats and raisins.
place on greased or lined cookie sheets and bake for 11-13 minutes.
Once the cookies are cooled completely, spread the hot fudge and the marshmallow cream onto the cookies to make a sandwich, this was my kids favorite part…
And enjoy! Super Easy and so yummy!!

Tip me Thursday: Halloween Decor
Ok.
I have a confession.
I’m obsessed with the Holidays. By Holidays, I mean the period of time beginning when school starts (August twenty something) to Valentines Day.
All the other days in the year I don’t really care about. Just Kidding!! I just think its really fun to decorate and be festive during the chillier months of the year, it makes me happy!!!
Ok, so I’ve had my fall decor up since August twenty something. I can’t help it you guys, I just LOVE Fall!!
I’ve got some Halloween crafts up my sleeves I’ll be showing you in future posts, but for now here are some pics to help get ya in the fall mood:)
(Nevermind, that when I took these it’s like 90 out and the sun is shining, just imagine, cool, snuggly, fall…)
Want to add dimension to your decor? Hang some festive balls from the ceiling with fishing line and a thumbtack…
Wrap a fun fall garland around your candles for an extra accent
I use battery operated candles that are set to come on in the evening, I love the “flickering light” it gives off in the evening…
Add Halloween Ornaments to your wreath for a spooky look…
A few pumpkins, a bale of hay, and some leaves, and it looks like fall! (Except for the hot shining sun outside:)
Who’s ready for a corn maze or a pumpkin patch??!!!

Tuesday Tutorial: Pillow Shams
Remember these pretty curtains…

Well, where we live it’s extremely windy, so they lasted maybe a week… Bummer because I absolutely LOVED them!!
But I have just about used the last of this fabric on various projects in the bedroom that I’m FINALLY almost finished re-decorating! Woohoo!!!
Maybe I’m going a little overboard, but I can’t stand to see the fabric go to waste!!
Yet another one of these up-cycled projects: Pillow Shams!!
(Please excuse this picture, as soon as the rest of the bedding and pillows are done I will have a finished look:)
Supplies:
- pillow (for measuring the size of your sham)
- about a yard of fabric (for 1 pillow sham) (depending on the size of your pillow)
- thread
- sewing machine
- rotary cutter and self-healing mat
Step 1:
Lay out your fabric flat on top of your cutting mat. Place your pillow on top of the fabric.
I just eye-balled it and cut around the edge about 2 1/2 inches (giving myself room for seam allowance and the 2-inch border along the edge)
After cutting this top piece, I measured and cut a more precise rectangle.
Step 2:
Cut the two back pieces of your sham. Take the measurement of your top or front piece, add 3 inches to the length,(so that the back overlaps slightly) and cut two rectangle pieces equaling this length when laid side by side. You can make them the same size, or one slightly longer than the other (as I did). Just make sure the total length is 3 inches longer than your top rectangle piece.
Step 3:
Hem the sides of your back pieces. Do this by folding and pressing the fabric down 1/4 inch. Fold and press another 1/4 inch.
Top stitch as close to the folded edge as you can.
Do this for both pieces.
Step 4:
Now lay out your top piece of fabric with the right side facing up. Lay the two back pieces on top with the right sides down, wrong sides up (so the pieces should be right sides together). Make sure you line up the edges and overlap the hemmed edges in the center.
Pin in place, and stitch around the edge 1/2 inch. Clip your corners.
Step 5:
Turn the pillow case right side out using the flap on the back.
Press along the pillow sham to give you a clean crisp edge. Next, you will measure and pin two inches down, along each edge to form your border.
(I apologize for not having a picture of this step, I pinned 3 times on each side, and lined it up as I sewed along the edge.)
That’s it!! Insert your pillow, fluff, and Voila!!!
Pretty simple right!!
I can’t wait until I’m done with this room, and I can show you some before and afters:)

Monday Yummies: Peanut Butter Frosted Fudge Cupcakes
That was a fun week with Marina!! So excited to have her on board with Just Sew Sassy!
Sooo, my baby turned two this month!! He’s obsessed with Nemo, and I knew I had to try my skills at cake decorating… Hmm…
It’s ok, you can laugh! I think I’ll stick to sewing…
I’m ashamed to say this cake was made with a box of cake mix… (I was really focusing on the decorating:)
So I had to have something delicious for those of us not into loaded with sugar frosted kid cakes…
Enter Peanut Butter Frosted Fudge Cupcakes!
So once again, I found this to die for recipe on Sister’s Cafe, and you have to try this frosting!! Oh my word, I could eat it by the spoonful!!
In fact, I did just that!
Creamy Peanut Butter Frosting on chocolate cupcakes…
Start off making your favorite chocolate cupcakes. (Even if you use a boxed cake mix, the frosting more than makes up for it, hee hee:) Frost with the following melt in your mouth creamy frosting!
1 cup creamy peanut butter
5 Tb butter at room temperature
1 tsp vanilla extract
1/4 tsp salt
1/3 cup milk
Combine all ingredients but milk in a bowl of electric mixer. Mix on med-low until creamy; scraping down sides occasionally. Add milk gradually with mixer in high speed until frosting is smooth and desired consistency. Frost your cupcakes and refrigerate. The butter in the frosting will melt and ruin the smooth texture of the frosting if you leave it at room temperature.
