Monday Yummies: Creamy Lemon Crumb Squares

I LOVE lemon desserts especially lemon bars… this is a fun twist to the lemon bar and is also so easy to make.

Thanks to the Pioneer Woman for another yummy dessert!

Ingredients

  • 1 1/3 cups all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup of butter, softened
  • 1 cup of brown sugar
  • 1 cup of oats
  • 1 14 oz can of sweetened condensed milk
  • 1/2 cup of lemon juice
  • zest of 1 lemon

Prep Instructions

Pre- Heat your oven to 350 degrees

Cream your butter and brown sugar together. Sift together your flour, baking powder and salt.

Add your oats to the butter and sugar mixture and blend all together.

Press half of the mixture into the bottom of a 8×11 inch. pan.

Mix together the lemon juice, lemon zest and milk, spread onto the crumb mixture. Sprinkle the rest of the crumb mixture on the top. Bake 20-25 min until golden brown.

Cut into squares and serve cool.

So yummy! You have to try this one, especially if you love lemon!

Tuesday Tutorial: Flirty Holiday Cafe Apron

The Holidays are coming… Dun Dun Dun!!!

For me that equals loads and oodles of baking, (squeal in delight)!!  I LOVE to bake and cook.  Especially with a fun little apron to wear.

This is a super easy, festive fall cafe apron that anyone can make!  You’ll be stylin all through the holiday baking season:)

Supplies:

  • cutting mat
  • rotary cutter
  • ruler
  • sewing machine
  • thread
  • 2 or 3 pieces of coordinating fabric (I’ve even made these using leftover quilting scraps)

Step1:

Cut your fabric.  First decide how long and wide you would like the main body (before adding ruffles) of your apron to be.  I cut mine 15 inches long X 28 inches wide. 

You can add as many ruffles as you would like, just make sure each one is 2 inches larger than the previous.   I made the top ruffle 4 inches long, and the bottom ruffle 6 inches long.  For the width of each ruffle, take the width of your main body piece of fabric and one and a half it, or double it.  I chose to one and a half mine.  So I cut each strip to be 42 inches wide.

Next, cut your waist straps.  I just keep the fabric folded and cut each strap 5 inches wide, and into an even “V” shape at the top, along the selvage edge, so that when unfolded, your straps are around 40 inches long.  This way they’re super long and you can wrap them around to tie in the front.

 

Step 2:

Get your iron out and start pressing!  Hem each side of each piece of fabric by folding down the side 1/4 inch, pressing, and folding again another 1/4 inch and pressing again.  I like to pin it in place before sewing. 


Fold the waist straps in half length-wise, right sides together, and press in place.

Step 3:

I try to iron all at once, and then sew all at once.  So now let’s move on to the sewing machine.  Hem each piece of fabric by sewing along your pressed edges, keeping close to the inside folded edge. 

Change your stitch to a long basting stitch for a sec, and sew along one edge of the ruffle piece.  Pull the bobbin thread to gather up the fabric and form a ruffle.  Repeat for the other ruffle piece.

For the waist straps, change your stitch setting back to normal.  Then start along the side of your raw edges (leaving one end open for turning), and sew each strap along the raw edge finishing at each point.  

Clip the corners and threads, turn right-side out, and press again to give a nice crisp edge.

Step 4:

Attach the ruffles.  Even out the ruffles so that each one is as wide as the skirt of your apron.  Lay the shortest ruffle on top of the skirt piece, right sides facing, lining up the edges. 

Next lay the longer ruffle on top of the shorter ruffle with the right side facing down also.  Pin along the edge every couple of inches, making sure to line up each ruffle as close to the edge as you can.

Sew in place.  Flip the ruffles down, and press in place.

Attach each waist strap to the top side of your skirt piece. 

Sew along the hem-line, and backstitch where the strap meets the apron to reinforce.

Clip all threads and the open part of the waist straps.

Guess what!!  You’re done!!

Ready, Set, Bake!!

Monday Yummies! Lemon Blueberry Muffins

My family has a tradition of breakfast for dinner every Saturday night, and we needed something a little different from our usual pancakes, waffles, and french toast.

These muffins were perfect!

Lemon Blueberry Muffins
2 cups flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp salt
zest of one lemon
1 egg
1 cup milk
1/2 cup shortening (or butter*)
1 cup frozen blueberries

 Topping (this makes extra – you can try cutting it down if you want):

1/2 cup butter, melted
1 Tb lemon juice
1/2 cup sugar

 Mix dry ingredients and set aside. Beat egg, milk and shortening. Stir in blueberries. Add dry ingredients and lemon zest. Stir gently to combine. Bake at 375 degrees for 20-25 minutes. Combine butter and lemon juice. While the muffins are still warm, dip the tops in the butter and lemon juice, then dip in sugar. Makes 12 muffins.

 *I substitute butter because I love the taste! It works great either way.

Eat when they’re warm and let them melt in your mouth!!

Tuesday Tutorial: No Carve Pumpkin Centerpiece

My family is counting down for Halloween(I can’t believe it’s almost here!!) I love carving pumpkins every year but I really wanted to try something different this year… My kiddos and I had a blast making these pretty glittery pumpkins. They turned out to be so EASY and I love how they look on my table…

Supplies:

  • A few small pumpkins
  • Glitter
  • Mod Podge
  • Festive Plate (I got mine for 2 bucks at Hobby Lobby)
  • Festive branches or leaves

  1. Coat your entire pumpkin with Mod Podge

Cover your pumpkins with glitter

Let it Dry and your done!
