Monday Yummies: Banana Chocolate Chip Muffins
Well I hope everyone had a wonderful Thanksgiving!
I can’t believe I am baking after all the cooking and eating I did last week!
Today was a cold, snowy day and I decided to make some chili for dinner and for dessert I was looking for something sweet to go with hot chocolate and I thought these muffins would go perfectly… and they did!
My husband and kids loved the muffins! They were so fast and easy to make and definitely hit the spot for a cold, stormy day!

Ingredients:
- 1 cup of granulated sugar
- 1 cup of Chocolate Chips
- 8 tbs. of room temperature butter
- 2 Large eggs
- 3 Ripe Bananas
- 1 tbs. Milk
- 1 tsp. ground cinnamon
- 2 cups of all purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
Directions:
Preheat your oven to 325 degrees
Cream your sugar and butter in a large bowl until it’s nice and fluffy. Beat in the eggs one at a time.
In a small bowl mash the bananas with a fork. Mix in the milk and the cinnamon and set aside.
In another bowl mix together the flour, baking powder, baking soda and the salt.
Add the banana mixture to the creamed butter mixture and then add in the flour mixture, and chocolate chips stir until well combined. Pour your batter into your muffin tins.
Bake for 20-25 minutes or until golden brown
And your done! Serve with your favorite hot chocolate!

Monday Yummies! Lemon Blueberry Muffins
My family has a tradition of breakfast for dinner every Saturday night, and we needed something a little different from our usual pancakes, waffles, and french toast.
These muffins were perfect!

Topping (this makes extra – you can try cutting it down if you want):
Mix dry ingredients and set aside. Beat egg, milk and shortening. Stir in blueberries. Add dry ingredients and lemon zest. Stir gently to combine. Bake at 375 degrees for 20-25 minutes. Combine butter and lemon juice. While the muffins are still warm, dip the tops in the butter and lemon juice, then dip in sugar. Makes 12 muffins.
*I substitute butter because I love the taste! It works great either way.
Eat when they’re warm and let them melt in your mouth!!
