Monday Yummies: Cookies w/ Everything
Ok, you ready for a simple, delicious recipe that requires everything you already have in your kitchen pantry…
Seriously, it has all my FAVORITE things you can possibly include in a cookie!!

Peanut Butter Oatmeal Chocolate Chip Cookies
Makes about 16 cookies
1 cup all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
½ cup creamy peanut butter
½ cup granulated sugar
1/3 cup light brown sugar
½ teaspoon vanilla extract
1 egg
½ cup rolled oats
1 cup semisweet chocolate chips
1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking soda and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
4. Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 10 minutes, or until the cookies are lightly golden.
Cool completely on the baking sheet and then store in an airtight container at room temperature.
I would recommend doubling this recipe, so you can eat lots and lots and share some too:)
Enjoy with a cold glass of milk, mmmm nothing better…

Monday Yummies!! Pumpkin Chocolate Chip Cookies w/ Burnt Butter Icing
Are you ready for the yummiest combo with pumpkin you’ve ever tried!! Seriously, these cookies are yummy just by themselves, but add the icing and OH MY WORD!!! They are delish!!

Best Ever Pumpkin Chocolate Chip cookies!!
Sift together dry ingredients then add to above wet mixture.
Add 1 cup milk chocolate chips. Bake cookies at 350 degrees for 12 minutes. Allow to cool then frost.

Monday Yummies: Oatmeal Sandwich Cookies!
I was looking for something fun and yummy to make with the kiddos and I found this fun recipe by Paula Deen. The Oatmeal cookies are so fluffy and yummy. I substituted the raisins for chocolate chips though because my family’s not big fans of raisin cookies…
Ingredients
- 1 cup of butter, at room temperature
- 1 1/4 cup packed brown sugar
- 1 large egg
- 1/4 cup of milk
- 2 cups all purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 1/2 cups quick cooking oats
- 1/2 cups of raisins ( I used a cup of chocolate chips)
- Hot fudge sauce
- Marshmallow cream
Preheat the oven to 350 degrees.
In a large bowl cream the butter and sugar until it’s creamy. Add the egg and then the milk until it’s all combined.
In a medium bowl mix the flour, baking soda, salt, cinnamon, and nutmeg. Slowly beat in the dry ingredients to the butter and sugar mixture. After it’s all combined add in the oats and raisins.
place on greased or lined cookie sheets and bake for 11-13 minutes.
Once the cookies are cooled completely, spread the hot fudge and the marshmallow cream onto the cookies to make a sandwich, this was my kids favorite part…

Monday Yummies: The Best Chocolate Chip Cookies
Who doesn’t LOVE chocolate chip cookies? If you don’t, I’m just so sorry. You’re missing out. My cute Canadian friend Paula, brought these over for us to try. My husband who isn’t a big sweets guy was dying over how good these were.
What’s your secret ingredient, I asked her…

So I paid her to pick me up a few bags on her next trip home, boy do they ever make a difference!
Best Chocolate Chip Cookies
Ingredients:
- 1 cup of butter (I use 1/2 margarine and 1/2 butter)
- 1 cup brown sugar
- 1 cup white sugar
- 1 tsp vanilla
- 2 eggs
- 2 1/2 c blended oatmeal (I blend it in the food processor)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 cups of flour (I use 1 cup whole wheat flour, and the other cup white, less guilt ya know…)
- 12 oz bag chocolate chips (if you can get a hold of some Canadian chocolate chips, they’re amazing)
Directions:
Preheat oven to 375. Mix softened butter with your sugars. Next add oatmeal. Then your eggs and vanilla. Last ad your dry ingredients and blend well. Chocolate chips come last.
Bake in oven for 6-8 minutes.
Enjoy with a glass of ice cold milk.

Too Pretty to Eat… Nope, Dig in!!!
Recipe for the Prettiest Pizza you’ll ever eat, (and the yummiest)
Ok, so I do A LOT of baking, it’s probably my most favorite thing to do besides sew… But I have never made a fruit pizza!
Crazy! I know!
So I thought I would try one this weekend. I had some leftover snickerdoodle dough and thought I would try it as my crust. Here’s a yummy recipe for Snickerdoodle cookies that would work just great. (Instead of shaping into balls put a large mound of dough on a pizza stone, or round baking pan, and press til about an inch away from the edge. Then bake according to recipe directions.)
Ingredients for Snickerdoodle Cookies
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 1/2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons white sugar
- 2 teaspoons ground cinnamon
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
- Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
- Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
Ingredients for Pizza Spread
8 oz package of cream cheese (softened)
1/2 cup granulated sugar
2 tsp vanilla
Directions:
Blend together all ingredients.
Create/Design your Pizza
After your crust has completely cooled, spread the cream cheese mixture over entire crust.
Add desired slices of fruit. I used blueberries, blackberries, strawberries, mangoes, apples, and bananas. Yum-O!!!
